Dating: Advice please!

I'm a normally-sighted person. I've been on two dates with an amazing independent and beautiful young woman. At first I had no inkling as to her disability, she functions almost perfectly. Although she is legally blind, she does have some sight mostly in the periphery of her vision. This makes for an interesting dynamic between us, as we have somewhat different concepts of eye contact. I very much enjoy spending time with her, but I am having somewhat of a difficult time redefining my concept of conversation, and I find myself jumping to different topics prematurely due to my incorrect perception of her level of interest. Any ideas about this specifically, or the whole situation in general? Any advice is greatly appreciated.

E CAN ONLY SPEAK ON HOW I WOULD ACT AND FEEL. I DONT KNOW HER AND SINCE SHE IS A PWESON OF HER OWN.
I WILL TRY AND ENLIGHTEN YOU AS TO HOW WE SEE THE WORLD AND WHATS AROUND US. WE ARE NOT AS DIFFERENT AS SOME MAY THINK. WE ENJOY JUST ABOUT ANYTHING AS SIGHTED DO. WE JUST HAVE TO DO IT A LITTLE DIFFERENTLY.
AS FOR MYSELF I ENJOY THE COMMUNICATION THAT CAN COME FROM ANYONE ASKING QUESTIONS ABOU MY BLINDNESS AND HOW I DO THINGS. THEREFOR IT MAKES BOTH MORE COMFORTABLE AND RELAXED.
ALL I CAN SAY AND ASK OF YOU IS TALK TO HER. HER LIKES DISLIKES SO ON. WHAT SHE MAY NEED HELP WITH SO ON AND SO ON
