They can do almost everything, except for things that exclusively require sight. For example, brain surgery and flying a plane are generally considered not feasible.

However, blind kids can play most sports (although they may need adaptations) and can do most things, if there are enough adaptations. One of my students does downhill skiing, and she's totally blind (I think there is a guide with her, I"m not 100% sure).

Another person I know (who is now a teacher) is also a 7th level black belt in Judo.
